  3. Match the order tickets before their timers run out, or they walk to Tony's.
  4. 🧤 after taking cash, 🧊 keeps the cooler at 41°F or below, 🔥 keeps the tray at 140°F or above, 📣 pulls people in. Watch your stock: what you bought is all you have.
  5. Sell from 11:30 AM to 7 PM: lunch rush, a quiet afternoon, then the evening rush. The commissary locks up at 8 and the walk back takes 30 minutes. 🪧 closes up early.
